We’ve been on vacation the past week (well, apartment hunting/gambling… more on this later), so I have been cycling through some recipes I made over the Christmas break but never posted about. This one is definitely worth mentioning.
This Bailey’s Irish creme and pistachio fudge is now my new favorite fudge recipe. It is extremely easy to make, but super delicious. It is pretty rich, so make sure you have some friends to share it with and cut it into tiny pieces. And if you don’t have friends to share with… I say make it anyways.

That’s right y’all, only four ingredients!
First I melted the chocolate, sweetened condensed milk, and baileys in a sauce pan.
Then once the chocolate was melted, I took it off the stove and added the chopped pistachios.
Then I poured the mixture into a lined 9×9 pan and put it in the fridge to harden.

Bailey’s Irish Creme and Pistachio Fudge
Ingredients:
✔36 oz white chocolate chips
✔1 14-ounce can sweetened condensed milk
✔6 tablespoons Bailey’s Irish Cream
✔1/3 cup pistachios, blanched and chopped (more is okay)
Directions:
Line a 9×9 pan with foil and lightly grease with butter (or use nonstick foil); set aside.
In a heavy-bottom sauce pan over low heat, combine the first 3 ingredients and stir constantly until the mixture is completely combined. Remove from heat and stir in pistachios. Pour into prepared pan and chill until set. Cut and serve.






Do you think this would work well with milk or dark chocolate? I liked them a lot, but I’m not a huge white chocolate fan – for some reason it just always seems too rich for me and I can’t eat much of it.
Ya actually, the lady who wrote the original recipe also did a similar fudge recipe with dark chocolate. It is kahlua and dark chocolate fudge… the recipe is at this link, http://eatgood4life.blogspot.com/2011/01/kahlua-and-darck-chocolate-fudge.html . I’ve been meaning to try this one too.
